With 25+ years international experience mostly in Michelin star restaurants, Laurent Chevalier assists hoteliers and restaurateurs at high-end establishments to elevate or create their service standards and aim for excellence. Having worked in Europe, the US and Asia, Chevalier has an extensive network and is adept at leading both back of house and front of house employees, ensuring the highest standards of food and service are met.

In 2024, Chevalier celebrates his 8th year in Mainland China. His experience in major cities like Shanghai, Shenzhen, and Beijing has provided him with a deep understanding of diverse markets and their unique needs.

Immersed in the Chinese environment, he has gained invaluable insights into Chinese culture and cuisine while forging strong connections within the industry. Having participated in several restaurant openings across China and Japan, Chevalier is a valuable resource for advising on both conceptual development and pricing strategies.

In addition to his keen focus on service excellence and operational requirements, he is also equipped to assist with the financial aspects of the business and support Human Resources, thanks to his extensive network of connections.
