With a rich background in hospitality, Jean-Noel started as a maitre d for Pierre Cardin and sharpened his skills at Maxim's Beijing with Madam Song. From there, he worked at Le Grand Colbert in Paris and then brought his expertise to Hong Kong, working at Madame Sixty Ate, Wooloomooloo, and Woolly Pig.
But don't be fooled into thinking hospitality is the only field he's explored. After jumping from a plane for the French Army, running a restaurant? That's a walk in the park for this man.
When he gets a chance, he loves escaping to the Philippines and hanging out on his farm with his family, which is far from the hustle and bustle of Hong Kong.
