With a celebrated career in Michelin-starred kitchens across Europe, Schmitt brings a wealth of expertise and a passion for elevating quality, aiming to enhance Clarence’s culinary offerings while maintaining exceptional value for guests across the city.
Schmitt's distinguished career includes leadership roles at some of Europe’s finest establishments. Most recently, he served as executive chef at Terre Blanche Hotel Resort Spa in Tourrettes from 2020 to 2024, overseeing five restaurants, including the Michelin-starred Le Faventia, which earned its star in 2023 under his guidance. His innovative approach also led to the creation of a pop-up street food restaurant and a series of culinary masterclasses, showcasing his commitment to making exceptional dining experiences more engaging and dynamic.
Prior to this, Schmitt led the kitchen at the Hotel Ile de la Lagune in Saint-Cyprien, where his inventive style earned a Michelin star for L'Almandin. His career also includes managing the Michelin-starred Le Diane at Hotel Fouquet’s Barrière in Paris, where he worked alongside acclaimed executive chef Jean Yves Leuranguer. Schmitt honed his craft in some of France’s most prestigious kitchens, including Hotel Abbaye de la Bussière, Restaurant Lameloise, and Restaurant Au Crocodile.
Schmitt’s career is filled with notable accolades, including being a two-time finalist in the Meilleur Ouvrier de France competition in 2022 and 2015, winning the Taittinger International Culinary Award in 2012, and receiving the Hope of the Year trophy from Chef Magazine in 2011.
