Nestled in the lush, elevated valleys of Mae Rim—where morning mist shrouds the canopy before giving way to radiant sunlight—a century-old Lanna mansion rises anew. Le Manoir Botanica emerges as a captivating sanctuary blending French culinary tradition with regional beauty. The estate marks its grand unveiling with the debut of Le Bistro at LMB, a casual yet refined French bistro encapsulating the mansion’s most relaxed spirit. Having welcomed its first guests on July 16, the bistro officially launches its lunch service on August 1.
Understated by design, the soft opening reflects the estate’s overarching aesthetic philosophy. Le Bistro at LMB invites discerning diners to immerse themselves in the comforting charm of French bistro culture, reimagined through the bountiful produce of Northern Thailand’s high-altitude terroir. In the coming months, Culinary Director Chef Olivier Elzer will introduce an exclusive, course-based fine-dining program. Throughout the grounds, immersive gallery spaces allow guests to pause and take in the earthy scent of stone and soil refreshed by nature.
At the heart of the estate stands a grand century-old teakwood Lanna residence, meticulously restored to preserve its 19th-century soul. Soaring ceilings, weathered teak beams, and sweeping open-air verandas move in harmony with the natural rhythm of the surrounding forest. Every material has been thoughtfully curated to age gracefully—from hand-carved stone and traditional celadon ceramics to rich teakwood accents. The interior palette draws inspiration from the misty mountain vistas, anchored by a signature "Botanical Yellow" hue that mirrors the mansion’s original image: a "Garden in the Clouds" floating above the morning vapors. The result is an atmosphere at once vibrant and serene, where heritage, craftsmanship, and nature exist in quiet equilibrium.
Le Manoir Botanica is driven by a "Terroir to Table" philosophy—a vision for a self-sustaining culinary ecosystem. Ingredients are sourced directly from partner farms, highland growers, and local foragers across Northern Thailand, rooted in the belief that remarkable flavor stems from a profound understanding of altitude, climate, and season. Indigenous herbs, wild botanicals, organic produce, and single-origin Arabica coffee grown above 1,600 meters are reinterpreted through the rigorous technique of classical French cuisine, orchestrated by Chef Olivier Elzer.
Highlighted signature dishes include the Tomato Salad, featuring vibrant heirloom tomatoes paired with a warm, velvety Comté cheese foam and crunchy croutons; the Tiger Prawn Risotto, showcasing char-grilled tiger prawns atop a verdant herb-infused risotto, accented by the delicate sweetness of tomatoes; and a quintessential Crème Brûlée, featuring a delicately caramelized sugar crust that cracks to reveal a silky vanilla bean custard beneath.
